Chocolate Cashew Butter Cups


  • 1/4 cup coconut oil, melted
  • 1/2 cup cashew butter (or any nut butter you prefer)
  • 3 T cocoa powder
  • 3 T erythritol (or other non-caloric sweetener)*
  • 1/2 tsp vanilla extract


  1. Combine all ingredients until well combined.
  2. Pour into silicone mini-muffin cups
  3. Place cups in the freezer until set.
  4. Store in refrigerator or freezer.

*You can use maple syrup or honey as a sweetener also.
